Breakfast Burritos – freeze ahead of time for a quick meal!

These make a quick and easybreakfast, lunch, or dinner!Great for lunches on the go!

8 burrito-size flour tortillas

1 cup shredded cheddar cheese

1 cup shredded pepper jackcheese

12″“18 eggs, scrambled (salt andpepper to taste)

1″“1ó lbs. ground sausage, cookedand drained

 

Warm tortillas in microwave to soften. Fill each tortilla with 1/4 cupcheese (half cheddar, half pepper jack), 1/2 cup eggs, and 1/4 cup sausage. Wrapinto a burrito and then wrap in foil.If freezing, see directions below. Otherwise,bake in the foil at 350Ëš for 10″“15 minutes until cheese is melted and burritos areheated through. (Rotate halfway through baking time.) You may also choose towarm on a barbecue grill: Make sure they are fully thawed for this method. Placewrapped burrito on grill. Rotate and turn often until they are warm throughoutand the cheese is melted. You may also heat in a microwave for quick lunches,but the tortilla will not be browned and crispy.

Freezing directions: Place wrapped burritos in a freezer bag andfreeze.
